Onion Soup with Risoni

    Not only tasty but healthy, this soup is perfect for cold days. Risoni pasta in onion and tomato soup is sure to please.

    Serves: 4 

    • 125g risoni pasta (orzo)
    • 1 kg onions, diced
    • 3 tablespoons oil
    • 5 cloves garlic, diced
    • 6 cups (1 1/2 litres) water
    • 1 cup (250ml) dry white wine
    • 1 (400g) tin sliced tomatoes
    • 3 bay leaves
    • 6 allspice berries
    • salt and pepper, to taste
    • marjoram, to taste
    • soy sauce, to taste
    • parsley, to garnish

    1. Cook the pasta in boiling salted water.
    2. Meanwhile, in a large saucepan, fry the onions in the oil until lightly golden. Add garlic, water, wine, tomatoes, bay leaves and allspice. Season the soup with salt, pepper, marjoram and soy sauce to taste.
    3. Add the cooked pasta after the soup has simmered 10 minutes. Serve with chopped parsley to garnish.
