Pork and Cabbage Soup

    Pork ribs and sauerkraut makes this wonderful winter soup from Poland. It's very good served with warm bread.

    Serves: 6 

    • 4 litres water
    • 1 kg sauerkraut
    • 800g boneless pork ribs
    • 1 large carrot, grated
    • 4 bay leaves
    • 6 allspice berries
    • 2 tablespoons flour
    • 2 tablespoons butter
    • salt, pepper and sugar to taste

    1. Rinse the ribs and cut into slices. Simmer in a saucepan of lightly salted boiling water 1/2 hour, skimming any foam.
    2. Rinse the sauerkraut and add to the simmering meat. Add the carrot and spices.
    3. When the sauerkraut is soft, make a roux by melting the butter in a small saucepan and stirring in the flour until golden. Add roux to the soup and check seasoning.
