Coconut Green Pea Soup

    This is a variant of cream of peas soup which uses coconut milk. If you want to make it vegan, use a veggie stock cube and omit the sour cream.

    Serves: 6 

    • 5 potatoes, quartered
    • 250g tinned peas
    • 4-5 cloves garlic, diced
    • 1 stock cube
    • 1 bay leaf
    • 3 allspice berries
    • 1/2 teaspoon black pepper
    • 400ml coconut milk
    • sour cream and fresh basil, to garnish

    1. Boil a saucepan of water and add potatoes, peas, garlic, stock and spices. Simmer 20 minutes, or until potatoes are soft, then remove bay leaf and allspice.
    2. Add coconut milk and simmer 2 more minutes. Let cool 20 minutes, then puree in a blender.
    3. Reheat and serve with sour cream and basil leaves.
