Turn the slow cooker on then place the pork in it. Sprinkle with salt and curry powder then rub the spices well over the meat. Pour the coconut milk, and stir into the slow cooker to combine. Turn the slow cooker on the lowest setting and cook for 8 hours until done.
After 6 hours stewing add the carrots and dates to the slow cooker. Put the lid back on and continue to cook.
After 7 hours peel and seed the butternut pumpkin then dice. Season with a teaspoon of cumin and fry for a few minutes in a frying pan with a little oil. Add the diced butternut pumpkin to the slow cooker. Put the lid back on and simmer 1 hour.
To Serve: About 20 minutes before serving prepare the couscous according to the package directions. Serve the curry after 8 hours with the couscous and a handful of spinach leaves beside it.
