It is autumn and I wanted a dessert recipe that's not too unhealthy... it's done! Mashed pumpkin, Greek yogurt, eggs and some sugar ... There is no harm in doing good!


Serves: 8 

  • 1 kg mashed pumpkin
  • 4 eggs
  • 3 or 4 tablespoons Greek yogurt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon vanilla essence
  • 3 or 4 pinches nutmeg
  • 100g caster sugar

Preparation:5min  ›  Cook:1hour  ›  Ready in:1hour5min 

  1. Preheat the oven to 160 degrees C. Butter a baking pan.
  2. Mix all ingredients in a bowl. Pour into the baking pan and cook until the mixture seems to be starting to firm; about an hour. Prick with a knife, it should come out a little wet. The mixture will solidify on cooling. Serve cold.
