Creamy Shallot Soup

    An onion soup based on shallots which are milder than regular onions. It is cream yet vegan due to the use of soy cream.

    Serves: 4 

    • 10 onion shallots, diced
    • 3 tablespoons olive oil
    • 300ml dry white wine
    • 1 teaspoon Italian seasoning
    • 400ml soy cream
    • salt and pepper, to taste
    • cayenne pepper, to taste
    • fresh parsley, to garnish

    1. In a food processor, puree the shallots with 3 tablespoons olive oil.
    2. Heat a saucepan over very low heat, add the shallot mixture and gently cook without browning 5-6 minutes.
    3. Pour in the wine and bring to a simmer. Add Italian seasoning and simmer 5 minutes.
    4. Add soy cream, salt, pepper and cayenne to taste. Simmer 5 minutes. Serve, garnished with fresh parsley.
