I prefer to serve this spicy soup with bread and cheese on the side, not melted on top, but if you want to make it more like a French onion soup you can toast it in the oven.


Serves: 4 

  • 1 beef shank
  • 6 cups water
  • 1 stock cube
  • 750g onions, sliced
  • 1 tablespoon butter
  • 1 small tin tomato paste
  • 1 red chilli, minced
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 2 cloves garlic, minced
  • 1/2 baguette
  • few slices Gruyere cheese
  • salt and pepper, to taste

  1. Place the shank in the water with the stock cube. Simmer on low heat 1 - 1 1/2 hours. Remove the shank, discard the knuckle and dice the meat. Set aside. Reserve the liquid.
  2. Fry the onion in 1 tablespoon butter approximately 20 minutes.
  3. Add tomato paste to the soup liquid and stir well. Add onion, meat, chilli, basil, thyme and oregano. Simmer 15 minutes. Add garlic and season with salt and pepper.
  4. Serve the soup with bread and cheese on the side.
