Pumpkin Chicken in a Pressure Cooker


    Pressure cookers are a wonderful option to make stews and casseroles in a fraction of the time. This is a wonderful recipe for chicken and pumpkin stew.

    Serves: 8 

    • 50g butter
    • 2 cloves garlic, minced
    • 1 onion, diced
    • 1 kg chicken breast, cubed
    • 1 1/2 kg pumpkin, peeled and diced
    • 2 chicken stock cubes
    • 1 cup tomato pasta sauce
    • 1 cup cottage cheese
    • parsley, to taste
    • chives, to taste

    1. In the pressure cooker, place the butter, garlic and onion. Saute.
    2. Add to the pressure cooker some of the chicken pieces (reserve the rest), the diced pumpkin and chicken stock then pressure cook for 15 minutes.
    3. Once cooked, beat until creamy. Add the remaining chicken breast and the tomato pasta sauce. Pressure cook for 10 minutes.
    4. Finally add the cottage cheese and if desired the parsley and chives. Serve with white rice.
