Basic Cauliflower Soup

    A delicious and simple cauliflower soup made from a few basic ingredients. If you like you can garnish with toasted croutons and grated cheese.

    Serves: 4 

    • 6 cups water
    • 1 stock cube
    • 1 whole head cauliflower
    • 2 tablespoons margarine
    • 2 tablespoons flour
    • salt, pepper and nutmeg, to taste
    • 1 cup creme fraiche
    • 1/2 bunch parsley, chopped

    1. In a saucepan, bring water to a boil with the stock cube and head of cauliflower. Cook 15 minutes, then remove the cauliflower, reserving the liquid.
    2. Melt the margarine in a saucepan. Add flour and stir until smooth without any lumps. Little by little add the cauliflower liquid, stirring, to desired degree of thickness.
    3. Season the soup with salt, pepper and nutmeg. Cut up the cauliflower into florets and add to the soup. Stir in creme fraiche and parsley, reheat and serve.
