    This is a recipe that I created with three of the ingredients that I love most: pumpkin, basil and cream.

    Serves: 2 

    • 200g penne
    • 1/2 pumpkin squash, peeled and diced
    • 1 bunch fresh basil
    • 1 garlic clove, crushed
    • 1 teaspoon thyme
    • 1 tablespoon olive oil
    • salt and pepper, to taste
    • 200g cream
    • 1/2 chicken stock cube
    • 100ml water

    1. Preheat oven to 190 ° C.
    2. Cook the penne according to package directions. Set aside.
    3. In a baking dish, combine the pumpkin with basil, garlic, thyme, olive oil, salt and pepper. Place in the preheated oven and bake until the pumpkin is soft.
    4. Place the pumpkin in a saucepan and mix with the cream, chicken stock and water. Heat until it boils.
    5. Mix the cooked penne and serve with grated Parmesan.
