Tomato and Fennel Soup

    A delicious and slightly spicy soup of tomatoes, orange juice and fennel. It's very easy to make and bursting with vitamins.

    Serves: 2 

    • 2 cups (500ml) water
    • 1 cup (250ml) freshly squeezed orange juice
    • 6 large tomatoes, seed and diced
    • 1 fennel bulb, sliced
    • 1/4 teaspoon chilli pepper
    • 1/4 teaspoon hot paprika
    • 1/2 teaspoon fennel powder
    • salt and pepper, to taste
    • 1/2 teaspoon sherry vinegar

    1. Bring the water to the boil in a saucepan and add orange juice, tomatoes and fennel. Simmer 20-25 minutes until fennel is soft.
    2. Puree the soup in a blender or with a stick blender.
    3. Season with chilli pepper, paprika, fennel powder, salt and pepper. Simmer 5 minutes, add vinegar and simmer 5 more minutes. Serve.
