Leek and Potato Soup in the Pressure Cooker

    This soup is especially tasty served with garlic croutons, grated cheese or a dollop of sour cream if you like.

    Serves: 4 

    • 5 leeks
    • 2 large potatoes, peeled and cubed
    • 3 cloves garlic
    • 2 cups (500ml) water
    • salt and freshly ground black pepper, to taste
    • chicken stock, as needed (optional)

    1. Remove the tough green outer leaves of the leeks. Cut in two lengthwise and rinse out any dirt. Slice into 5cm lengths.
    2. Place the leeks, potatoes, garlic and water in a pressure cooker. Cook under pressure 20-30 minutes (it doesn't matter if they're a bit overcooked).
    3. When vegetables are cooked, pour the soup into a blender (or use a hand blender). Add water or chicken stock to desired consistency. Add salt and pepper to taste and puree until smooth.
