Cream of Sweet Potato Soup

    Sweet potatoes or kumara has a sweet nutty flavour that adds a delicious taste to this easy leek and potato soup.

    Serves: 4 

    • 1 chicken stock cube
    • 250ml boiling water
    • 3 small leeks, cleaned and sliced
    • 1 white onion, diced
    • oil, as needed
    • 3 large sweet potatoes, peeled and cubed
    • 350ml water
    • salt, to taste
    • 300ml cream

    1. Dissolve the chicken stock cube in the boiling water.
    2. In a saucepan soften the leeks and onion in oil, without browning. Add the sweet potatoes, stock and extra water. Cover and simmer 30 minutes.
    3. Puree in a blender until smooth. Season with salt, add cream and blend again. Serve warm.
