Creamy Leek and Potato Soup

    If you've never made leek and potato soup it's one of the easiest soups to make and so delicious! Good for summer or winter.

    Ingredients
    Serves: 4 

    • 5 leeks, sliced
    • 2 potatoes, peeled and diced
    • 1 onion, diced
    • a little butter
    • 2 vegetable stock cubes
    • 2 tablespoons cream
    • salt and pepper, to taste

    Directions
    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Saute the leeks, potatoes and onion in butter 7-10 minutes.
    2. Add water to cover and the stock cubes. Cover and simmer over low heat 15-20 minutes.
    3. Blend the soup and add cream. Season with salt and pepper to taste. It's ready!
