A good winter soup, cheap, tasty and nourishing. With a loaf of crusty bread it will cheer you up!


Serves: 8 

  • 4 whole leeks, washed and sliced
  • 2 potatoes, peeled and diced
  • 6 stalks celery, sliced
  • 2 onions, peeled and quartered
  • 1 clove garlic
  • 1/4 bunch parsley, chopped
  • 1 stock cube
  • To serve
  • cream
  • chopped parsley

Preparation:10min  ›  Cook:1hour30min  ›  Ready in:1hour40min 

  1. Place all the vegetables in a saucepan and cover with water. Add the stock cube and bring to a simmer. Simmer gently for 1 1/2 hours.
  2. Blend the soup and serve with a drizzle of cream and a sprinkling of parsley.
