    This extremely simple and rustic leek and potato soup is extremely satisfying with a little sour cream.

    Serves: 8 

    • 2 1/2 litres cold, salted water
    • 1 kg potatoes, peeled
    • 500g leeks, white part only, sliced
    • black pepper, to taste
    • 4 tablespoons sour cream
    • 1 tablespoon fresh chervil (or parsley)

    1. Place the potatoes in the cold water, bring to a low simmer and cook 30 minutes. Add leeks and simmer 15 more minutes.
    2. Blend the soup, add pepper to taste, and serve with a dollop of sour cream and a sprinkling of chervil.
