Pumpkin Fritters

    These are the most delicious pumpkin pancakes with the scent of cinnamon and inclusion of raisins. They are great as a side dish or as a dessert.

    Serves: 4 

    • 300g pumpkin
    • 1/2 cup milk
    • 1/2 teaspoon cinnamon
    • 1/3 cup raisins
    • 1 egg
    • 2-3 tablespoons sugar
    • pinch of salt
    • 1 teaspoon vanilla
    • pinch of nutmeg
    • 4 tablespoons flour
    • vegetable oil, for frying

    1. Grate the pumpkin then put in a saucepan with the milk and bring to a boil.
    2. Add the cinnamon and raisins then cook for 5 minutes. The milk must be absorbed and the pumpkin become soft.
    3. Let the pumpkin cool slightly, to shift into a bowl then add the egg, sugar, salt, vanilla and nutmeg.
    4. Add flour and mix well.
    5. Heat the frypan to a medium heat. Add vegetable oil and spread the fritters with a spoon. Fry for 2-3 minutes on each side.
