Ingredients
Serves: 6
- 300g pumpkin
- olive oil
- 2 oranges
- lettuce
- handful walnuts
- salt and pepper, to taste
- Dressing
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon lemon juice

- Peel and dice the pumpkin. Drizzle with olive oil and salt. Lay in a roasting tray then place in a preheated oven at 200 degrees C for 30 minutes.
- Peel, seed and remover the pith from the oranges then cut into small slices. Cut or tear the lettuce. Chop the nuts.
- Dressing: Mix the honey, balsamic vinegar, vegetable oil and lemon juice.
- To Serve: Place the pumpkin, oranges and lettuce on the serving plate then sprinkle with nuts, salt and pepper. Drizzle with the dressing.
