    Wonderful and delicious salad that will uplift your mood! Beautiful pumpkin, juicy oranges, and a honey sauce.

    Ingredients
    Serves: 6 

    • 300g pumpkin
    • olive oil
    • 2 oranges
    • lettuce
    • handful walnuts
    • salt and pepper, to taste
    • Dressing
    • 1 tablespoon honey
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon vegetable oil
    • 1 tablespoon lemon juice

    1. Peel and dice the pumpkin. Drizzle with olive oil and salt. Lay in a roasting tray then place in a preheated oven at 200 degrees C for 30 minutes.
    2. Peel, seed and remover the pith from the oranges then cut into small slices. Cut or tear the lettuce. Chop the nuts.
    3. Dressing: Mix the honey, balsamic vinegar, vegetable oil and lemon juice.
    4. To Serve: Place the pumpkin, oranges and lettuce on the serving plate then sprinkle with nuts, salt and pepper. Drizzle with the dressing.
