Gazpacho is very refreshing on a hot day and it is also full of vitamins from fresh raw vegetables. So easy to prepare.


Serves: 6 

  • 1 cucumber, diced
  • 2 red capsicums, seeded and diced
  • 1 kg ripe tomatoes, diced
  • 1 clove garlic, diced
  • 1 onion, diced
  • 10cm stale baguette, diced
  • 2 tablespoons wine vinegar
  • 6 tablespoons olive oil
  • salt and pepper, to taste

Preparation:20min  ›  Extra time:12hours chilling  ›  Ready in:12hours20min 

  1. Combine all ingredients in a large bowl and let rest overnight in the fridge.
  2. When ready to serve, blend the soup and adjust salt and pepper to taste.
