Autumn is the triumph of the pumpkin, here used as a colorful addition to a simple and tasty first course pasta recipe.
4 tablespoons olive oil
1 clove garlic, finely diced
chilli, halved, optional
oregano, to taste
- Clean the pumpkin then cut it into cubes and simmer it with a little water in a large saucepan for about 20 minutes or until it is softened and falling apart.
- In a saucepan heat the oil then saute the garlic and chilli. Add the pumpkin, salt and oregano then cook for a few minutes to let flavours combine. If necessary add a ladle of hot water.
- In the meantime boil the linguine in salted water until al dente.
- Combine the linguine and pumpkin sauce then serve.
