Pumpkin Pasta

    Autumn is the triumph of the pumpkin, here used as a colorful addition to a simple and tasty first course pasta recipe.

    Serves: 4 

    • 2kg pumpkin
    • 4 tablespoons olive oil
    • 1 clove garlic, finely diced
    • chilli, halved, optional
    • oregano, to taste
    • 500g linguine

    1. Clean the pumpkin then cut it into cubes and simmer it with a little water in a large saucepan for about 20 minutes or until it is softened and falling apart.
    2. In a saucepan heat the oil then saute the garlic and chilli. Add the pumpkin, salt and oregano then cook for a few minutes to let flavours combine. If necessary add a ladle of hot water.
    3. In the meantime boil the linguine in salted water until al dente.
    4. Combine the linguine and pumpkin sauce then serve.
