    This lentil soup is delightfully easy to do and vegan. Ras el hanout is a spice powder used in African cooking, it's not hard to find.

    Ingredients
    Serves: 6 

    • 100g red lentils
    • water, as needed
    • 400ml coconut milk
    • 1 tin diced tomatoes
    • 1 onion, diced
    • 2 pinches garlic powder
    • 1 teaspoon ras el hanout
    • 1/2 vegetable stock cube
    • salt and pepper, to taste

    1. Place the lentils in a saucepan and add water to cover well.
    2. Add coconut milk, tomatoes, onion, garlic powder, ras el hanout and stock cube. Bring to a boil. Reduce heat and simmer 30 minutes or until lentils are tender.
    3. After 15 minutes cooking, taste for salt and pepper, and add more ras el hanout if necessary.
