Creamy Cauliflower and Potato Soup

This is a thick and very creamy cauliflower and potato soup. If you like you can add some spices like coriander or curry.

Ingredients
Serves: 4
- 2 tablespoons vegetable oil
- 1 onion, diced
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 cauliflower, cut into florets
- 2 large potatoes, peeled and diced
- 450ml vegetable stock
- 450ml milk
- salt and freshly ground pepper, to taste

- In a casserole or heavy based saucepan, heat the oil and saute the onion until transparent.
- Add the garlic, parsley, cauliflower, potatoes, stock and milk. Bring to the boil, reduce heat and simmer 20 minutes until vegetables are tender.
- Blend the soup with a hand blender until thick and smooth. Season with salt and pepper to taste and serve hot.
