Creamy Cauliflower and Potato Soup

    This is a thick and very creamy cauliflower and potato soup. If you like you can add some spices like coriander or curry.

    Serves: 4 

    • 2 tablespoons vegetable oil
    • 1 onion, diced
    • 1 clove garlic, minced
    • 1 tablespoon fresh parsley, chopped
    • 1 cauliflower, cut into florets
    • 2 large potatoes, peeled and diced
    • 450ml vegetable stock
    • 450ml milk
    • salt and freshly ground pepper, to taste

    1. In a casserole or heavy based saucepan, heat the oil and saute the onion until transparent.
    2. Add the garlic, parsley, cauliflower, potatoes, stock and milk. Bring to the boil, reduce heat and simmer 20 minutes until vegetables are tender.
    3. Blend the soup with a hand blender until thick and smooth. Season with salt and pepper to taste and serve hot.
