White Chocolate Banana Brownie

    A very moist and easy brownie cake to make.

    Makes: 1 cake

    • 250g unsalted butter
    • 200g white chocolate
    • 4 eggs (60g each)
    • 240g white sugar
    • 160g plain flour
    • 1/2 teaspoon baking powder
    • 1-2 blackened bananas, mashed
    • 1-2 cups frozen berries

    1. Preheat oven to 160 degrees C, fan forced.
    2. Melt the butter and chocolate in saucepan over low heat, stirring slowly and constantly. Allow to cool to room temperature.
    3. Beat the eggs and sugar together until pale and thick.
    4. Add the flour and baking powder and stir through slightly.
    5. Add the banana to the egg mixture and whisk for approximately 1 minute on a low speed in an electric mixer.
    6. While on low speed pour in the butter and chocolate mixture. Beat until mixed thoroughly.
    7. Pour into a prepared square or round 22cm pan that has been lined with baking paper.
    8. Add the berries on top and bake for approximately 80 minutes in the preheated oven.


    You can use any berries or fruit you wish. They can either be fresh or frozen. Another option is to put a crumble mixture on top of the berries.

    This was a promising recipe and the batter looked good. However, it made way too much batter for a 22cm pan. Combined with an unnecessary instruction to set the oven to ' fan forced', the cake overflowed and was dark and overcooked on the outside long before the centre set. I will try it again in a wide, shallow pan at least 25 x 35 x 5cm. using a gentle slow bake at 160°C regular, not forced.  -  19 Aug 2017
