Easy Cauliflower Soup

    Low calorie, rich in fibre, cauliflower is one of the easiest vegetables to digest. It's delicious in soup too!

    Serves: 6 

    • 2 onion shallots, diced
    • 25g butter
    • 1 cauliflower, cut into florets
    • 2 litres chicken stock
    • 1 bunch chervil or parsley, chopped
    • olive oil, to taste
    • grated Parmesan, to garnish

    1. Saute the shallots in butter in a saucepan until soft. Add the cauliflower and chicken stock.
    2. Bring to a simmer and simmer 20 minutes. Add the chervil or parsley and blend with a stick blender.
    3. Ladle soup into bowls and top with a drizzle of olive oil and a sprinkle of Parmesan.
