A thick cucumber soup which is a lovely cooling appetiser on a hot day. If you like, garnish with some fresh mint, basil or coriander.


Serves: 6 

  • 2 cucumbers, peeled and seeded
  • 1 litre plain yoghurt
  • 6 tablespoons olive oil
  • 1 onion shallot, diced

  1. Combine all ingredients in a blender and puree to a smooth texture.
  2. Serve cold.
