This is such an easy side dish recipe that can me made in a jiffy. The roast pumpkin is flavoured with a range of herbs and spices but you can adjust to your own preference.
500g pumpkin, peeled and seeded
2 tablespoons olive oil
2 teaspoons coriander seeds, coarsely ground
2 teaspoons dried oregano, crumbled
1/2 teaspoon fennel seeds
pinch of cayenne pepper
1 teaspoon salt
1 teaspoon freshly ground black pepper
1-2 cloves garlic, minced
- Preheat oven to 200 degrees C.
- Mix olive oil in a small bowl with the spices, salt and pepper and rub into the pumpkin.
- Layer in a roasting dish, then raost for 30 minutes.
