This is such an easy side dish recipe that can me made in a jiffy. The roast pumpkin is flavoured with a range of herbs and spices but you can adjust to your own preference.


Serves: 4 

  • 500g pumpkin, peeled and seeded
  • 2 tablespoons olive oil
  • 2 teaspoons coriander seeds, coarsely ground
  • 2 teaspoons dried oregano, crumbled
  • 1/2 teaspoon fennel seeds
  • pinch of cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1-2 cloves garlic, minced

Preparation:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Preheat oven to 200 degrees C.
  2. Mix olive oil in a small bowl with the spices, salt and pepper and rub into the pumpkin.
  3. Layer in a roasting dish, then raost for 30 minutes.
