In a large bowl combine the parsley, Provencal herbs, olive oil, garlic, salt and pepper. Add the diced pumpkin then mix well so that the pumpkin is evenly covered with the herb-spice mixture.
Add the pumpkin to an ungreased shallow baking dish then bake uncovered for 40-50 minutes in the preheated oven until the squash is soft. Turn the pumpkin every 15 minutes. After 25 minutes of baking sprinkle the pumpkin with the grated Parmesan cheese.
