Air Fried Banana Cake

    Everyone loves a good banana cake this is a scaled down version that makes a small cake ideal for the air fryer, or for a single person.

    Serves: 4 

    • 50g butter, at room temperature
    • 1/3 cup brown sugar
    • 1 egg
    • 1 banana, mashed
    • 2 tablespoons honey
    • 1 cup SR flour
    • 1/2 teaspoon cinnamon
    • pinch salt, to taste

    1. Preheat your air fryer to 160 degrees C. Spray a small ring cake tin with a non-stick spray.
    2. In a bowl beat the butter with the sugar until creamy. Add the egg, banana and honey then whisk into the butter mixture until smooth.
    3. Sift in the flour, cinnamon and salt then mix to make the cake batter.
    4. Transfer the batter to the ring tin and use the back of a spoon to level the surface. Put the cake tin in the air fryer basket.
    5. Set the timer to 30 minutes and bake the cake until a toothpick inserted in the centre of the cake comes out cleanly.

    Cook in an oven

    If you don't have an air fryer this recipe works well in a toaster oven or normal oven also. Add 5 minutes to the cook time.

    I noticed there was NO leveling agent (i.e.: baking soda). My cake was flat and took 45 min in air fryer and still gummy. I'm trying to like my fryer but this recipe isn't helping.  -  20 Oct 2018  (Review from Allrecipes USA and Canada)
