Potato and Leek Soup with Pumpkin

    Not your average leek and potato soup! The idea came to me when I was preparing soup and had a pumpkin in the oven.

    Serves: 5 

    • 250g leeks, washed and sliced
    • 250-300g potatoes, washed and diced
    • 1 cup (250ml) chicken stock
    • 1.2 litres water, or as desired
    • 500g cooked pumpkin
    • salt and pepper, to taste
    • toasted sunflower seeds, to garnish

    1. In a large saucepan, combine all ingredients except cooked pumpkin and bring to the boil. Partially cover and simmer until vegetables are cooked, 20-30 minutes.
    2. Add the pumpkin and puree with a hand blender. Season with salt and freshly ground black pepper to taste and serve sprinkled with toasted sunflower seeds.
