Cream of Broccoli and Leek Soup

This soup is an adaptation of the classic leek and potato soup with the addition of broccoli for extra colour and flavour.

Ingredients
Serves: 4
- 2 tablespoons olive oil
- 1/2 onion, diced
- 2 leeks, diced
- 2 potatoes, peeled and cubed
- 200g broccoli, diced (including stem)
- 4 cups vegetable stock
- 200ml cream
- salt and pepper, to taste

- Heat the oil in a saucepan and saute the onion for 5 minutes. Add leeks and fry 5 more minutes.
- Add potatoes and broccoli and saute 5 minutes.
- Add the stock and simmer 30-40 minutes until all vegetables are soft. Remove from the heat.
- Add the cream and puree the soup with an immersion blender. Reheat and season to taste. Serve!
