Cream of Broccoli and Leek Soup

This soup is an adaptation of the classic leek and potato soup with the addition of broccoli for extra colour and flavour.


Serves: 4 

  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 2 leeks, diced
  • 2 potatoes, peeled and cubed
  • 200g broccoli, diced (including stem)
  • 4 cups vegetable stock
  • 200ml cream
  • salt and pepper, to taste

Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

  1. Heat the oil in a saucepan and saute the onion for 5 minutes. Add leeks and fry 5 more minutes.
  2. Add potatoes and broccoli and saute 5 minutes.
  3. Add the stock and simmer 30-40 minutes until all vegetables are soft. Remove from the heat.
  4. Add the cream and puree the soup with an immersion blender. Reheat and season to taste. Serve!
