Vegetable Soup with Zucchini

    This is a very thick and rich soup, almost a stew, and a great way to use up the zucchini that are choking the garden.

    Serves: 5 

    • 40g butter
    • 1 tablespoon flour
    • 1/2 cup dry white wine
    • 2 large zucchini, peeled and diced
    • 1 red capsicum, seeded and diced
    • 2 carrots, sliced
    • 1 stalk celery, diced
    • 4 tomatoes, diced
    • 1/2 white onion, diced
    • 4 cups (1 litre) vegetable stock
    • salt, to taste

    1. Melt butter in a nonstick saucepan over low heat. Stir in flour. Add the wine and all the vegetables.
    2. Cover the vegetables with stock and season to taste. Simmer, covered, 30 minutes.
