Tomato and Cucumber Salad

    There is a lot of cutting to this recipe but I find that the effort is appreciated by all those who eat it.

    Serves: 4 

    • 6 tomatoes, cored and diced
    • 1 long cucumber, seeded and diced
    • 2 cloves garlic, finely diced
    • 2 sprigs parsley, finely diced
    • 1 teaspoon sea salt
    • 1/2 cup lemon juice
    • 1/2 cup extra virgin olive oil
    • 100g feta, crumbled

    1. In a bowl, combine the even diced tomatoes and cucumber.
    2. Add the seasonings of garlic, parsley, salt.
    3. Dress with the lemon juice and olive oil. Toss to combine well.
    4. Refrigerate for at least 2 hours before serving.
    5. Add the feta and mix again, then serve.
