Chilli and Mint Asian Soup

    As soon as I start to get a cold this is my go to recipe. I love all the Chinese herbs and spices and it never fails to make me feel better.

    Serves: 2 

    • 500ml chicken stock
    • 3cm ginger, finely diced
    • 4 cloves garlic, finely diced
    • 2 whole dried chillies
    • 1 packed Asian egg noodles
    • 6 mushrooms, sliced
    • 1 cup green vegetable, such as asparagus, bok choy or similar
    • 1 sprig mint, 1/2 sliced
    • spring onion,sliced, to garnish

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Add the stock, ginger, garlic and chilli to a saucepan and slowly heat so all the flavours combine.
    2. When simmering add the noodles, when soft add the mushroom and green vegetable then simmer for 1 more minute.
    3. Stir through sliced mint. Serve into bowls then garnish with the other half of mint and spring onion.
