    • 500g cooked, pureed pumpkin
    • 350ml coconut milk
    • 4 eggs
    • 200g sugar
    • 1 teaspoon vanilla extract

    1. Oil an 22cm pie tin and preheat the oven to 160 degrees C.
    2. Combine all the ingredients and beat until smooth. Pour into the pie tin.
    3. Bake pie until filling is set, about 45 minutes.
