This delicious pumpkin pie has a crust made out of crushed walnuts and not flour. Healthy and seasoned with lovely spices.


Makes: 1 pie

  • 250g walnuts
  • 1 teaspoon baking powder
  • 2 tablespoons butter, softened
  • 3 eggs
  • 450g pureed cooked pumpkin
  • 200ml coconut milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon mixed spice or nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • pinch salt
  • 3 tablespoons maple syrup or honey
  • 1 tablespoon turmeric

  1. In a food processor, finely grind the walnuts with the baking powder and salt. Add butter and pulse until grainy.
  2. Press the nut mixture into a 23cm pie tin. Heat oven to 180 degrees C and bake the crust for 15 minutes. Remove and let cool.
  3. Beat all the remaining ingredients together. Pour into the baked crust. Bake 50 minutes. Let cool completely and serve!
