    Ingredients
    Serves: 1 

    • 50g red capsicum
    • 1 slice crusty Italian bread
    • 1 teaspoon basil paste
    • 25g cottage cheese
    • basil leaves
    • kalamata olive

    Directions
    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Grill capsicum until skin is black. Place in plastic bag for few minutes to soften, peel and then slice.
    2. Toast bread and spread on basil paste and cottage cheese. Add capsicum, basil leaves and olive to garnish.

    Tip

    Basil paste can be found in the refrigerated herb section of the supermarket.
