Couscous with Beef and Pumpkin

    This Tunisian-style couscous recipe has a ton of good things in it, chickpeas, beef, turnips, carrots and of course pumpkin.

    Serves: 6 

    • 4 tablespoons olive oil
    • 2 large onions, diced
    • 2-3 cloves garlic, diced
    • 1 kg lean beef, cubed
    • 1 tin tomato puree
    • 2-3 tablespoons ras el hanout spice
    • salt, to taste
    • 2 potatoes, peeled and cubed
    • 2 carrots, sliced
    • 2 small turnips, peeled and diced
    • 1 handful fresh broad beans
    • 1 medium zucchini, diced
    • 1 large chunk pumpkin, cubed
    • 1 small tin chickpeas
    • 400g couscous
    • 3 tablespoons butter
    • 4 green capsicums, seeded and sliced
    • pepper, to taste

    1. Heat the olive oil in a large saucepan and fry onions and garlic until soft. Increase the heat and fry the meat until browned, then reduce temperature and add the tomato puree.
    2. Add the ras el hanout and salt to taste and mix well. Simmer with the lid off, adding water if necessary to ensure the meat is covered.
    3. After meat has cooked for 90 minutes add potatoes, carrots, turnips and broad beans. Simmer 10 minutes. Add zucchini, pumpkin and chickpeas.
    4. Cook the couscous according to package directions then stir in the butter. Fry the green capsicums in a little olive oil and set aside.
    5. Serve the meat and vegetables on top of the couscous and garnished with the capsicum strips.
