    Not quite cheesecake and definitely not custard, this dessert is lusciously, bananary (is that a word?) and delicious.

    Ingredients
    Makes: 1 pie

    • 1 packet chocolate ripple biscuits, crushed
    • 120g butter, melted
    • 600ml thickened cream
    • 3 tablespoons sugar
    • 1 teaspoon vanilla
    • 250g cream cheese, softened
    • 1 packet Cottees(TM) vanilla instant pudding mix
    • 1 cup cold milk
    • 1 can Nestles(TM) condensed milk
    • 6 ripe bananas
    • 1/2 cup toasted coconut

    Directions
    Preparation:30min  ›  Extra time:2hours chilling  ›  Ready in:2hours30min 

    1. Line bottom of 22cm springform tin with baking paper. Lightly grease sides.
    2. Mix the biscuit crumbs and butter together and press into bottom of tin and halfway up the sides. Refrigerate while making filling.
    3. Whip the cream with the 3 tablespoons of sugar and vanilla. Set aside.
    4. Using an electric mixer, beat the cream cheese until smooth and creamy.
    5. In a separate bowl, mix the instant pudding and milk until combined. Quickly add the pudding mix and condensed milk to cream cheese. Beat until smooth. Fold in 1 cup of the whipped cream.
    6. Remove biscuit base from refrigerator and cover bottom and sides of base with a thin layer of cream cheese mix.
    7. Slice 4 bananas and evenly cover cream cheese, bottom and sides. Cover with rest of filling, then the rest of the cream.
    8. Cover with cling wrap and refrigerate for at least a couple of hours.
    9. When ready to serve, decorate with the other 2 bananas, sliced, and toasted coconut.

    Toasting Coconut

    To toast coconut, sprinkle on baking tray and place under griller set at medium temperature, stirring occasionally until brown.

    This was very nice. It tasted like custard cheesecake. I thought it was a bit sweet (others didn't) so next time I will not be adding sugar to the whipped cream that is folded into the cheesecake. I only used 4 bananas, which was plenty and the flavour went right through the cheesecake. Next time I will use a different biscuit base only because I am not a fan of the chocolate base. But overall this was sensational. Everyone, you must try this, it is highly recommended. - 07 Feb 2016
