Spinach Soup

    This soup is so easy and delicious and so healthy and full of iron! My kids love it. Adjust the amount of garlic to your taste.

    Ingredients
    Serves: 4 

    • 500g spinach, fresh or frozen
    • 4 cups (1 litre) chicken stock
    • 1 onion, diced
    • 1 potato, peeled and diced
    • 4-5 cloves garlic
    • 4 cardamom pods
    • 50g grated Parmesan
    • 2 teaspoons cornflour
    • 150ml cream
    • salt, to taste

    1. In a saucepan, combine all ingredients except cream, cornflour, Parmesan and salt. Bring to a boil over high heat, then reduce heat and simmer 15-20 minutes.
    2. Remove from heat and puree with a hand blender. Stir in the Parmesan until melted.
    3. Stir the cornflour into the cream until dissolved. Add the soup, stirring. Reheat over medium heat until soup is thick. Season with salt and serve.
