Zucchini, Broccoli and Smoked Trout Soup

    Smoked trout combines perfectly with this green vegetable soup to make a whole and delicious meal. Super quick to make, too.

    Serves: 2 

    • 1 tablespoon oil
    • 2 onion shallots, finely diced
    • 1 tablespoon chopped parsley
    • 300g broccoli florets (fresh or frozen)
    • 200g zucchini, sliced
    • 4 cups (1 litre) vegetable stock
    • salt and pepper, to taste
    • 3 tablespoons cream
    • 1 tablespoon horseradish cream sauce
    • curry powder, to taste
    • 220g smoked trout, crumbled
    • 2 tablespoons chives, chopped

    1. Heat oil in a saucepan and saute the shallots and parsley until shallot is softened. Add broccoli, zucchini and vegetable stock. Add salt and pepper and simmer 10 minutes.
    2. Puree the soup with a stick blender and season with the cream, horseradish and curry powder to taste.
    3. Ladle the soup into bowls and sprinkle with smoked trout and chives. Serve!
