The simplest possible recipe for homemade French onion soup. If you can, use homemade beef stock too, it makes all the difference.


Serves: 4 

  • 500g onions, thinly sliced
  • 2 tablespoons butter
  • 1 cup (250ml) white wine
  • 3 cups (750ml) beef stock
  • salt and pepper, to taste
  • 4 slices French bread, toasted
  • 80g Emmental cheese, grated

  1. Heat butter in a large saucepan and fry onions over low heat until soft and brown.
  2. Add white wine and stock and simmer 15 minutes. Season to taste with salt and pepper.
  3. Place soup in ovenproof bowls and lay slices of bread on top. Sprinkle with cheese and bake in the oven until cheese is melted. Serve.
