Quick French Onion Soup

    This is a great French onion soup recipe for when I don't feel like spending hours in the kitchen. Tastes just as fancy.

    Serves: 4 

    • 2 onions, thinly sliced
    • 2 tablespoons butter
    • 1/2 teaspoon thyme
    • 1/2 cup dry white wine
    • 4 cups (1 litre) beef stock
    • salt and pepper, to taste
    • 4 slices white bread
    • 300g Gruyere cheese, coarsely grated

    1. Melt the butter in a large saucepan on high heat. Add the onions and saute, stirring, until they begin to brown.
    2. Turn heat down to medium high and add the thyme. Keep sauteing until the onions are light brown.
    3. Pour in the white wine and saute until wine is evaporated. Add the stock and bring to a simmer. Season with salt and pepper if necessary.
    4. Meanwhile, preheat oven to 220 degrees C. Place the bread slices on a baking sheet and sprinkle with Gruyere.
    5. Once the soup is ready, toast the bread slices in the oven until cheese is melted and bubbly. Serve the soup with a bread slice on top of each bowl.
