Potato and Cauliflower Soup


    I like to make this soup in winter. It's a warming blend of potato, cauliflower, carrot and a mix of spices.

    Serves: 6 

    • 30ml olive oil
    • 2 onions, finely diced
    • 1 clove garlic, crushed
    • 3 large boiling potatoes, cubed
    • 3 stalks celery, sliced
    • 2 litres vegetable stock
    • 2 carrots, cubed
    • 1 medium cauliflower, cut into florets
    • 1 tablespoon dill, finely chopped
    • 1 tablespoon lemon juice
    • 1 tablespoon mustard
    • 1/2 teaspoon cumin
    • 300ml cream
    • salt and pepper, to taste

    1. In a large saucepan, heat olive oil and fry onions until soft, about 5 minutes.
    2. Add potatoes, celery and stock and simmer, covered, 10 minutes. Add carrots and simmer 10 more minutes.
    3. Add cauliflower, dill, lemon juice, mustard and cumin and simmer until the vegetables are soft, about 20 minutes.
    4. Puree the soup with a hand blender. Stir in cream, then season to taste with salt and pepper.
