Chilled Cucumber Soup with Yabby Tails

A seafood touch to a cold soup, a bit like a prawn cocktail. You can also use prawns or small crab legs or omit the seafood if you like.


Serves: 4 

  • 4 sprigs fresh dill, finely diced
  • 2 sprigs fresh mint, finely diced
  • 2 cloves garlic, diced
  • 1 onion shallot, diced
  • 2 cucumbers, peeled and diced
  • 2 cups sour cream
  • 150g creme fraiche
  • salt and pepper, to taste
  • 200g cooked yabby tails

  1. Place all ingredients except the yabby tails in a blender and puree until smooth (or use a stick blender). Check for salt and pepper.
  2. Garnish with the yabby tails.
