    This is a variant on gazpacho that uses cucumbers instead of tomatoes. If you have organic unsprayed cucumbers, you can leave them unpeeled for a brighter colour.

    Ingredients
    Serves: 4 

    • 2 medium cucumbers, peeled, seeded and diced
    • 2 cloves garlic
    • pinch cayenne
    • 2-3 tablespoons lemon juice
    • 1 teaspoon raw sugar
    • small handful mint leaves
    • water, as needed
    • salt and pepper, to taste
    • 100g feta, crumbled

    1. In a blender, combine cucumbers, garlic, cayenne, lemon juice, sugar and mint. Pulse to a puree. If necessary add water until soup is desired consistency.
    2. Season with salt and pepper and chill for 1 hour in the fridge. When serving, sprinkle with crumbled feta.
