You won't believe how easy this sweet corn soup is to make - just blend the ingredients together and simmer!


Serves: 6 

  • 1 (420g) tin corn
  • 2 cups vegetable stock
  • 125g sour cream
  • salt and pepper, to taste
  • 1 tablespoon chives, chopped

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Place the corn and stock in a blender and puree until smooth. If you like, strain the corn (optional) and return to the blender.
  2. Add the sour cream and beat well. Transfer the mixture to a saucepan.
  3. Simmer over high heat 10 minutes, stirring constantly. Season with salt and pepper and cook 2 more minutes. Serve in small bowls, garnished with chives.
