Easy Cabbage Soup

    A super simple soup of cabbage and potatoes with some sliced smoked sausage. The perfect thing for a warming winter dinner.

    Serves: 6 

    • 1 kg potatoes
    • water, as needed
    • 2 stock cubes
    • 1 onion, sliced
    • 2 smoked sausages
    • 1 small cabbage, very thinly sliced
    • olive oil and salt, to taste

    1. Place the potatoes in a saucepan and add water to cover. Cook over high heat until tender to a fork. Add the stock cubes and sliced onion and simmer.
    2. Meanwhile, in another saucepan, boil the smoked sausages in water until tender. Remove and let cool slightly, then remove skins and slice to your liking.
    3. Remove the potatoes and onions from the saucepan but keep the cooking liquid. Discard the onions. Mash the potatoes and return to the saucepan.
    4. Add the sausages and cabbage and simmer 4 minutes. Add a little olive oil to taste and check the salt.
