Chunky Smoked Fish Pate

    With the variations of flavourings you can add to this recipe it gives you the choice of either spicy or mild. And so so easy to make when in a hurry to get to the party. Good for those watching their diets around Xmas or holiday times.

    Serves: 6 

    • 1-2 spring onions (white and green parts), finely chopped
    • 1/4 - 1/2 red onion, finely chopped
    • 250g lite cream cheese (or you can use normal)
    • juice of 1 lemon, or to taste
    • your choice of other flavours: sweet chilli sauce, wasabi, Tabasco sauce, lemon pepper, cracked pepper, cayenne, parsley, chives, garlic, dill
    • 250g smoked fish (trout is nice)

    1. Mix together both lots of onions, cream cheese and lemon juice in blender.
    2. Add also the flavourings you have chosen and season these to your taste.
    3. Chop up fish into smallish chunks and stir into the cream cheese mix. The recipe tends to be tastier this way but if you prefer a smooth pate then blend fish with the mix.
    4. Refrigerate until required.


    A touch of spice in this is nice especially if you have a strong tasting fish. Wasabi is an interesting touch that a girlfriend used in her version.
